Variables For A Romantic Bush Dinner

When balancing the idea of a romantic meal, the word aphrodisiac is more often than not cast into the equation. And as this ancient myth goes aphrodisiacs are derived from Aphrodite, the Greek goddess of love and beauty. And those crazy for romance advocate that to cooking up a romantic storm, they use aphrodisiac ingredients such as: Cajun crabs, grilled avocados, roasted asparagus with orange sauce and chocolate truffles. But the bush has a romantic equation of its own! Taking into account scintillating shades of orange as the sun goes down amidst an animated jungle, crackling wood-fires, and the evocative cry of the fish eagle… does one really need aphrodisiacs? So with this romantic setting painted, I took the liberty to interview a couple of chefs to get their take on a romantic culinary bush experience and what they would prepare. Herewith are the results:

 

Chef Faye Goldwyer, Owner of the Savoy Guest House, Johannesburg

 

Faye never intended to become a chef, but when she was approximately 17 years old, a lady in her complex was giving Italian cooking classes. And from just a few lessons she fell completely in love with Italian cuisine and food. From that moment she knew she wanted to become a chef…

Faye says, “My idea of a romantic bush dinner would be on a hot South African summer’s night, sitting outside under the stars (perhaps even a shooting-star). This coupled by fresh bush air and tantalising aromas of food cooking alongside a chilled glass of white wine. I am absolutely mad about food, therefore even though I am in the bush I still love to prepare and eat good food!”

 

SUGGESTED MENU:

 

“I have chosen Thai/rustic flavours as they complement either a charcoal braai or gas cooker very well.”

 

Starter

 Zingy coconut prawn skewers

 

 Main

Beef fillet with red wine sauce served with baby potatoes and roasted asparagus and parmesan

  Dessert

 Strawberries served with whipped cream and nutella

 

Tips:
To make life easy, buy prawns that are already de-veined, it is a messy job that no one particularly loves. The longer you marinade the prawns the tastier they will be. Prepare as much as you can the day before. (This) helps the beef fillet keep all its juices, and when you finished cooking the fillet, allow it to stand for a further 5 min. The meat is better after it has rested. Ensure that there is enough space after dinner and take the time to enjoy feeding each other strawberries.

Lindsay always loved experimenting in the kitchen and started to cook when she was about 9/10 years old. She became a chef because she loved the end result, and the enjoyment people experience from eating her food. She cooks from her soul, and one can taste this in her food.

 

 

SUGGESTED MENU: 

 

 Starter

 Salad of watermelon, pears and pecorino served on baby leaves and tossed in ginger dressing

 

  Main

 Coffee infused beef fillet done on the coals served with a blueberry and red wine sauce (Keep the fillet whole as it tends to be more tender when cook this way) fine beans with almonds and rosa tomatoes baby potatoes roasted in the pan over coals

 

  Dessert

Iced mixed berries with a white chocolate sauce
Frozen amarella shots

 

Tips:
Keep it simple and prep/cook as much as possible before hand, then while the fillet is cooking you can warm up the vegetables and potatoes. Keep berries in the freezer and make the chocolate sauce ahead. You want to enjoy you dinner and spend as much time together and not over the coals. Take your time, savour the food and enjoy your partner. You have all night.

 

Lindsay says, “Now with dinner served, take lots of candles and hurricane lamps all around the boma with a fire in the middle. A beautifully laid table that is low to the ground with huge Moroccan cushions to sit on, and looking out over the bush, with the sun setting.”
